Marsilio Brand- the Flagship of Tuscany

I’Toscano EV

From the Florentine hills of Tuscany, composed of infrantoio and moraiolo varieties, blended with some leccino and pendolino, this intensely green oil has hints of artichoke, an elegant fragrance, floral and vegetal flavor, and is known for it’s ‘pizzihino’ (a bit of spiciness). Harvested between October’s end and the first half of November, Marsilio Brands persistently guard against oxidation by airless cool storage in stainless steel containers in an underground cantina until flavors develop and mature. Only then is it ready to bottle.

Castello di Volpaia

Ginovannella Stanti and family use the sinolea technique to extract their olive oil from  Frantoio, Leccino, and Moraiolo varietals. Although it yields less, the sinolea machine combs the stone-crushed olive paste with hundreds of tiny steel blades, pulling the fresh oil from the solids, producing an extraordinarily pure olive oil, low in acidity. The result is an oil of a rather dense green color with an intensely fruity nose, with an unripe tomato and artichoke aroma with a mildly spicy finish.

Olio Verde                                                      500ml

Hand-picked at an early green stage, spring irrigated 300 year old olive trees, unfiltered and naturally clarified in terracotta amphorae: this is an outstanding olive oil.

Gianfranco Becchina’s estate in Sicily produces this intense, full flavor oil,

redolent of fresh-cut grass with a fresh green olive liveliness, from 100% Nocellara del Belize variety olives. The chlorophyll suspended in the minute particles of sediment act as a natural preservative. Fancy Food Show Gold Winner, 1998.

Other Marsilio Brand Offerings:

Florens EV

Every time it is poured Florens, or ‘in flower’, releases a bouquet of perfumes that liberate and exalt the sense of smell. Harvested the first 15 days of November, made from olives that have just begin to ripen. Dark green to intense green in color, this spicy oil is full-bodied. The aromas of artichoke, fresh olive, vegetable and almond increase after the first 6-8 months.

Bellavita EV

Bellavita , a harmony of fragrances and suave aromas, delicate flavors and a light body, has what Italians say there is never enough of: dolcezza, or sweetness. Harvested from mid-December into January, it is made from ripe olives and is light green to green with golden hues. Its smooth, delicate consistency is aromatic of fresh olives, with almond and vegetal overtones.

Res by Marsilio: Pure Natural Oil Infusions

Lemon Oil        Black Pepper Oil         Ginger Oil

RES is the result of years of study and research dedicated to natural oils, capturing the fragrance, flavors, and colors of the oils of citrus fruits, herbs, spices, and fresh flowers.

RES adds the essence of nature into cooking, and has been called ‘molecular gastonomy’.

Essential oils are pure, natural products obtained by distilling or pressing herbs, spices, flowers, and citrus fruits. They have been described for 5000 years as the ‘hormones’ or ‘life’s blood’ of a plant for their extremely concentrated and essential characteristics. Essential oils contain only the pure flavor of the plant, and dissipate quickly in the air. By mixing these essentials with the highest quality extra virgin olive oil, Marsilio perfectly captures their strong, pure flavors with a notably high resistance to oxidation and aromatic losses.
